In 2015, Chimay is paying homage to an ancestral method; ageing its Chimay Blue in wooden barrels. This ageing method provides it with exceptional flavours and a complex taste. This taste varies depending on the type of barrel used. This beer also undergoes a third fermentation in the bottle.
